Abstract

Yeast.-Relates to the manufacture of yeast by processes in which, during fermentation, yeast containing wort is withdrawn and centrifuged, fresh wort or solutions of nutrients or chemicals or centrifuged wort or water being usually simultaneously added. According to the invention, a large or a small part of the centrifuged yeast is returned to the fermentation vat after a short or long period in a controlled manner for a short or a long time with the object of maintaining during that time a certain weight of yeast per unit volume of wort in the fermenting vat. This density of yeast may be maintained at such a value that the withdrawn wort is incompletely fermented and contains alcohol; or at a higher value so that the withdrawn wort is completely fermented but still contains alcohol; or at a still higher value so that alcohol is either not formed or disappears during the fermentation. The returned yeast has also the effect of reducing the grade of generation of the yeast. This rejuvenation may be increased bv the further addition of fresh yeast prepared outside the system to the fermenting wort or to the storage vat for the centrifuged yeast. The centrifuged yeast may, before its return, be passed through fermentation vats with wort of the same mutual concentration in respect of a nutrient such as sugar, the yeast being added in such quantity that a smaller yeast density is established, thereby increasing the formation of alcohol and the activity of the zymatic enzymes, which is conductive to regeneration. The centrifuged yeast can be separated from the wort by pressing. The returned yeast and the fresh yeast may be in the form of compressed yeast or otherwise. At certain periods, especially when centrifuged wort is added to the fermentation vat, the withdrawn wort may be returned to the vat instead of yeast centrifuged therefrom.. The fermenting wort is aerated and kept at a temperature of about 30‹ C.
