Medicines for internal use; bacteria, cultivating.-Lipoids, particularly phosphatides, are extracted from materials containing them by dialysis without destruction of the cellular structure. The materials, e.g. peas and beans, are treated at a temperature not exceeding 37‹ C. with suitable liquids, e.g. water or dilute alcohol. The phosphatides are removed from the dialysing liquid by adding thereto fat-dissolving substances such as alcohol or acetone which cause precipitation of the phosphatide. Albuminous substances or products of their decomposition such as amino acids, aspartic acid, glutamic acid, &c. may be added. The phosphatides so obtained are stated to be soluble in water and may be dried and preserved in dry condition. Separation from the dialysing liquid mav also be effected by treatment with adsorptive agents such as aluminium and iron hydroxides, animal charcoal, &c. The phosphatides may be subsequently removed from these agents by the use of weak acids or bases or salt solutions- The phosphatides so obtained contain carbohydrates, anthocyanins, and inorganic compounds, in particular of calcium and iron, and are suitable for use as food, as medicinal substances or nutrient media for bacteria.
