Abstract
Scraped surface heat exchanger comprising a stator having a cylindrical chamber 1 surrounded by a jacket 2, in which chamber a rotor 3 carrying scraping means 10 is rotatably mounted, at least the surface of the rotor, including the scraping means mainly consisting of unhalogenated polyalkene and preferably polypropene. An ice confection product is prepared in the heat exchanger by cooling and agitating an ice mix to generate ice crystals which are thereafter frozen to a storage temperature of -18 DEG C. <IMAGE>
Description
AnDaratus and Method
The invention relates to an improved scraped surface heat exchanger, particularly for use in preparing ice confection products such as ice cream, water ice, sherbet and milk ice.
For manufacturing ice confection products in a continuous process, a scraped surface heat exchanger is usually used comprising a stator having a cylindrical chamber surrounded by a jacket for refrigeration, in which chamber a rotor carrying scraping means is rotatably mounted.
In practice only a limited degree of freezing can be achieved since at higher ice content the ice confection material ceases to flow properly through the heat exchanger and thereafter the annular space between the stator and the rotor will be blocked. Thereafter the ice confection material in the heat exchanger has to be thawed out whereafter the freezing process can be resumed. This results in disturbances and interruptions of the production.
An object of the invention is to provide a heat exchanger of the above general type having a reduced tendency to blocking, also called " icing up".
The invention provides a heat exchanger as described hereinbefore; at least the surface of the rotor, including the scraping means, mainly consisting of unhalogenated polyalkene and in particular polypropene.
For improved dimensional stability preferably a rigid material skeleton at least for the greater part provided with a polyalkene coating is used as a rotor and/or as a scraper blade. Suitable rigid materials for use as a skeleton are the usual metals as used in food processing equipment, in particular stainless steel.
In a preferred embodiment the scraping edges of the scraper means bearing on the heat exchanging surface of the stator are of bare metal, while the rotor is essentially coated with or consisting of unhalogenated polyalkene. The hinge parts of the rotor connecting the scraper means pivotably to the main structure of the rotor may but need not be partly uncoated. To reliably prevent the coating from peeling and coming off the skeleton feather edges are to be prevented. In practice this may be realized by arranging grooves in the metal skeleton along the free edges of the coating. Preferably the grooves are shaped such that a firm locking is effected. For an improved attachment throughgoing holes may be provided in the skeleton for accommodating ligaments between the coating on either side of the skeleton.
The invention also relates to a method for preparing an ice confection product by cooling and agitating an ice mix in a scraped surface heat exchanger, comprising a stator and a rotor carrying scraping means, to generate ice crystals in said mix and thereafter freezing this partly frozen mix to a storage temperature of -18eC or less. According to the invention the initial ice crystal content may be increased if a heat exchanger is used, at least the surface of the rotor and of the scraping means thereof mainly consisting of a polymer having nonadhesive properties with respect to the frozen ice mix.
Preferably polyalkene and in particular polypropene is used as a polymer having non-adhesive properties.
The invention will be described below by way of example only, reference being had to the attached drawings, in which:
Fig.l is a longitudinal sectional view of one embodiment
of the heat exchanger according to the invention;
Fig.2 is a sectional view taken along line II-II in
Fig.l;
Fig.3 and 4 are enlarged elevational views of two
embodiments of scraper blades according to the
invention; Fig.5 and 6 are cross sectional views of the scraper
blades as shown in Fig. 3 and 4 respectively.
The heat exchanger as shown in Figs 1 and 2 comprises an elongated cylindrical chamber 1 through which a mixture to be frozen may be caused to travel. This chamber is surrounded by a jacket 2, through which a refrigerant may be circulated.
Inside the chamber a coaxial rotor 3 is rotatably supported. The rotor 3 comprises a central shaft 4, which is supported in suitable bearings 5, 6 attached to either end wall of the chamber 1 and a solid cylinder 7 of polypropene having three symmetrically arranged flat sides 8. Hinge means 9 extend from the flat sides for pivotably connecting a plurality of scraper blades 10 to the rotor 3. These scraper blades 10 are bearing with a knife edge 11 against the cylindrical inner surface 12 of the chamber 1. The rotor 3 and the cylindrical chamber 1 are defining an annular space 13 therebetween.
Fig.3 is an elevation and Fig.5 a cross section of a scraper blade 10 having a knife edge 11 at the one longitudinal side and hinge means 9 near the opposite side. The scraper blade is made of a stainless steel skeleton 15 and has a coating 16 applied thereon such that the area 17 along the knife edge 11 is left bare.
The free edges 18 of the coating are relatively thick and anchored in longitudinal grooves 19 along the bare area 17, as is clearly to be seen in the cross-sectional view of Fig. 5.
For additional attachment small round apertures 20 are provided in the metal blade 15, as is shown in broken lines in Fig.3. The coating 16 on either side of the blade is interconnected by ligaments 21 extending through the apertures.
Fig.4 is an elevational view of a scraper blade 22 in a second embodiment. Similar parts as discussed in connection with Fig.3 and 5 are indicated by the same reference numbers.
The metal skeleton 23 of this scraper blade is provided with a series of rectangular apertures 24, through which the coating 16 on either side of the blade is interconnected.
Improvement of the attachment may also be obtained by dovetailed grooves 25 along the bare areas 17 as shown in cross-section in Fig.6, whereby a firm lock between the skeleton 23 and the edges 26 of the coating 16 is obtained.
Claims (16)
1. Scraped surface heat exchanger comprising a stator
having a cylindrical chamber surrounded by a
jacket, in which chamber a rotor carrying scraping
means is rotatably mounted, characterized in that
at least the surface of the rotor including the
scraping means mainly consists of unhalogenated
polyalkene.
2. Heat exchanger according to claim 1, wherein the
rotor including the scraping means mainly consists
of polypropene.
3. Heat exchanger according to any claim 1 or 2,
wherein a metal skeleton at least for the greater
part provided with a polyalkene coating is used as
a rotor and/or as a scraper blade.
4. Heat exchanger according to claim 3, wherein the
scraper blades are provided with bare metal
scraping edges.
5. Heat exchanger according to claim 4, wherein
grooves are arranged in the metal skeleton along
the free edges of the coating.
6. Heat exchanger according to claim 5, wherein
grooves are shaped such that a firm locking is
provided.
7. Heat exchanger according to any claim 3 to 6,
wherein throughgoing holes are provided in the
skeleton for accommodating ligaments between the
coating on either side of the skeleton.
8. Scraper blade for use in a scraped surface heat
exchanger comprising a metal skeleton having a
sharp knife edge at one longitudinal side and
connecting means near the opposite side,
characterized in that the skeleton for the greater
part is coated with polyalkene.
9. Scraper blade according to claim 8, wherein the
skeleton is coated with polypropene.
10. Scraper blade according to any claim 8 or 9,
wherein the skeleton is provided with a bare metal
scraping edge.
11. Scraper blade according to claim 10, wherein
grooves are arranged in the metal skeleton along
the free edges of the coating.
12. Scraper blade according to any claim 8 to 11,
wherein throughgoing holes are provided in the
skeleton for accommodating ligaments between the
coating on either side of the skeleton.
13. A method for preparing an ice confection product by
cooling and agitating an ice mix in a scraped
surface heat exchanger, comprising a stator and a
rotor carrying scraping means, to generate ice
crystals in said mix and thereafter freezing this
partly frozen mix to a storage temperature of -18 C or less, wherein a heat exchanger is used, at least
the surface of the rotor and of the scraping means
mainly consisting of a polymer having non-adhesive
properties with respect to the frozen ice mix.
14. A method according to claim 13, wherein the surface
of the rotor and of the scraping means mainly
consists of an unhalogenated polyalkene.
15. A method according to claim 14, wherein the surface
of the rotor and of the scraping means mainly
consists of polypropene.
16. An ice confection product obtainable by the method
according to any claim 13 to 15.
