Abstract

A method of obtaining a bacterial ferment for a medical-dietetic product provides for cultivation on the milk of an initial lactic acid bacteria mixture. The mixture of initial lactic acid bacteria comprises Streptococcus thermophilus 108, Streptococcus lactis subsp. diacetilactis 13c65-64, Streptococcus thermophilus 66-1413, deposited on 11.07.88 at the USSR Research Institute for Genetics and Industrial Microorganism Breeding under No. VKPM V-4422, Lactobacillus bulgaricus 176, Lactobacillus acidophilus 180, deposited on 11.07.88 at the USSR Research Institute for Genetics and Industrial Microorganism Breeding under No. VKPM V-4423, at a ratio between the bacteria of the genus Streptococcus and the bacteria of the genus Lactobacillus equal to 2:1-6:1 in parts by weight.
