Abstract

An apparatus for the low-temperature homogenisation and working of ingredients for food-stuffs and feed- stuffs such as dough is provided which permits a rolling kneading action to be effected on the ingredients without causing substantial shearing thereof. The apparatus comprises a planetary arrangement of flighted spindles (1, 2), the planetary spindles (2) being disposed around a central spindle (1). The flights on the planetary spindles (2a) engage with the at least one flight (1a) of the central spindle and also with at least one flight (4a) formed on the internal wall of a cylindrical housing (4). The ingredients which are to be gently homogenised and worked by being subjected to a rolling kneading action between the planetary spindles (2), the central spindle (1) and the internal wall of the housing (4). A thrust ring (3) is provided at the discharge end of the housing. <IMAGE>

Description

SPECIFICATION An apparatus for homogenising and working ingredients for food- and feed-stuffs such as dough Field ofthe Invention The present invention relates to an apparatus for homogenising and working food- and feed-stuffs.
More particularly, the invention relates to an extrusion apparatus suitable for kneading dough for the production of bread and pastry and for the lowtemperature breakdown and homogenisation of the ingredients used for producing food-stuffs and feedstuffs.
Background of the Invention and Prior Art Discussion Apparatus which extrude food- and feed-stuffs are known. Thus, for example, a single-screw extruder device is disclosed in German Patent Specification No. 3 023 124 and a twin-screw extruder device is disclosed in German Patent Specification No.
2 461 543. Such apparatuses can be operated continuously and have numerous applications of use because they achieve good homogenisation of the mixtures of ingredients from which the foodstuffs is to be produced.
The good homogenising effect is produced by the shearing of the ingredients for the food-stuff. The shearing is principaliy effected between the flights which are disposed on the rotating screw core or cores and the stationary internal wall of the hollow cylinder in which the screw or screws rotate and is due to the relative speed of the screw flights and the hollow cylinder with respect to one another.
The main disadvantage of these known extrusion systems resides in the fact that many food-stuff ingredients, especially those containing starch, increase the shearing effect but with undesirable consequences.
It is actually possible to reduce the shearing by reducing the rate of rotation of the screw and/or by altering the structure of the screw flight or flights.
However, it is not possible to eliminate the relative rotation between the stationary and rotating component parts of the device.
Object of the Invention The present invention seeks to provide an arrangement which permits the ingredients of foodstuffs and feed-stuffs to be worked in a gentle manner so as to permit them to be satisfactorily homogenised. Thus, the invention seeks to provide an apparatus which can be operated continuously but without considerable shearing of the ingredients of the food-stuffs and feed-stuffs being treated occurring.
Summary of the Invention According to the present invention, there is provided an apparatus for homogenising and working food- or feed-stuffs such as dough, comprising a planetary arrangement of spindles rotatable within a hollow-cylindrical housing, the planetary arrangement comprising a central spindle provided with at least one helical flight, a plurality of planetary spindles which are disposed uniformly ardund the central spindle and are each provided with at least one helical flight, the at least one helical flight on the central spindle engaging with the at least one helical flight on each of the planetary spindles, the at least one helical flight on each of the planetary spindles engaging with at least one helical flight disposed on the internal surface of the hollowcylindrical housing, the housing having an inlet end and a discharge end, a thrust ring being disposed within the housing at the discharge end thereof for absorbing the return pressure of the planetary spindles, the central spindle being drivable.
The central spindle in such an arrangement is caused to rotate by any suitable means such as an electrical drive operating th:ough a ±ansmission mechanism. The at least one helical flight of the central spindle engages or meshes in the helical flights of the planetary spindles and causes these latter to rotate jointly therewith. A rolling movement is produced between these component parts of the machine, whereby any material located between these component parts is subject to a rolling, kneading-type action.
A similar effect is produced when the material passes between the planetary spindles and the internal wall of the housing which is also provided with at least one appropriate helical flight. The at least one helical flight of each of the planetary spindles engages or meshes in the helical flight or flights disposed on the internal surface of the housing. In consequence, a further rolling movement between the planetary spindles and the wall of the housing is produced. This, in turn, produces a low-temperature, that is to say, a kneading, effect on material being processed such as a dough.
Because of the rolling movement of the component parts of the machine, a rolling-out action is also performed on the ingredients of the food-stuff such as a dough, without causing substantial shearing thereof. This latter effect causes frictional heating of the ingredients and, as stated hereinbefore, is undesirable. Such phenomenon is, it is believed, unavoidable in conventional extrusion systems because these machines are primarily shearing machines which introduce varying levels of frictional energy into the ingredients of the food-stuffs. Low-temperature processing of the ingredients is, in consequence, only possible to a very limited extent in the known arrangements.
The provision of the thrust ring, which is made of a material having a low coefficient of friction is necessary because the helical configuration of the flights on the various components of the apparatus cause an axial force to be produced which acts in a direction towards the discharge end of the apparatus. This force must be absorbed and the thrust ring is provided for this purpose.
Preferably, the planetary spindles are of differing lengths relative to the length of the central spindle so that ends of the planetary spindles are stepped at the inlet end of the apparatus.
Effectively, such an arrangement causes ingredient receiver chambers to be formed at the inlet end of the apparatus between the planetary spindles. This considerably facilitates the feed of the ingredients which are to be kneaded orworked into the apparatus. Moreover, the planetary spindles are prevented from being overloaded with material because there is no sudden large-scale feed of the ingredients into the apparatus.
Instead, this embodiment of the present invention permits a stepwise action to be performed by providing the planetary spindles with different lengths. The volume of the receiver chamber may be increased or decreased in a step-wise manner, thereby promoting a more gentle feed of the ingredients into the apparatus.
Desirably, the at least one helical flight on at least one of the planetary spindles is partially omitted to provide a spindle section with a roller-like external surface region. Such an arrangement permits the processing of the ingredients, a food-stuff such as a dough to be tailored even more closely to the nature of the ingredients. Thus, some ingredients are extremely sensitive to temperature and such an arrangement can take this into account. By providing such an arrangement, the rolling action on the ingredients can be reduced or increased in dependence upon the temperature tolerance of the ingredients, whilst still ensuring that a satisfactory homogenising effect is produced. In consequence, by suitably configuring the planetary spindles, the desired degree of kneading or homogenising of the ingredients ofthefood-stuffs being processed can be achieved.
Advantageously, the housing is disposed horizontally and includes a feed aperture fed by a feed hopper. By providing such an arrangement, the overali length of the apparatus can be kept to a minimum whilst simultaneously ensuring that the ingredients are fed satisfactorily into the apparatus.
This is because the ingredients pass directly into the spaces between the individual planetary spindles and are immediately rolled over successively by the spindles.
Further preferably, the housing is disposed vertically and is provided, at its upper end, with a feed hopper having a size corresponding to the free cross-section of the housing, agitator vanes being disposed in the feed hopper and being secured to a shaft which is connected to the central spindle, a discharge screw conveyor rotatable within a housing disposed at the lower end of the housing in which the planetary arrangement of spindles are located, and being connected to the central spindle, a return thread or threaded return conveyor being disposed below the discharge screw conveyor, the housing for the discharge screw conveyor being provided with at least one discharge aperture for the material being processed, the discharge screw conveyor and the shaft carrying the agitator vanes being disposed in bearings and the discharge screw conveyor being drivable.
The vertical disposition of the apparatus has the added advantage that the ingredients are held even more satisfactorily. This is particularly true if the planetary spindles are of different lengths, as has been described hereinbefore. After the material has passed through the apparatus, it is conveyed by the discharge screw conveyor to the discharge aperture.
Avery stable construction is achieved by the means used for the mounting of the shaft carrying the agitator vanes, which prevent the fluid ingredients of the food-stuff from agglutinating, and by the means used for the mounting of the lower discharge screw conveyor. The central spindle is non-rotatably connected to the discharge screw conveyor and is driven together with the shaft for the agitator vanes.
Further desirably, a hollow-cylindrical housing is disposed at the inlet end of the housing in which the planetary arrangement of spindles are located and has an internal diameter corresponding to the internal diameter of said housing, the two housings being flange-connected, a feed screw conveyor which is drivabie and which is connected to the central spindle being disposed and rotating within the hollow-cylindrical housing. Such a construction permits an improved feeding action to be achieved because the feed screw conveyor exerts pressure on the ingredients and, in consequence, also increases the conveying action of the apparatus.
Brief Description of the Drawings Certain embodiments of an apparatus for homogenising and working the ingredients of foodand feed-stuffs in accordance with the present invention will be further described, by way of example, with reference to the accompanying drawings, in which: Fig. 1 is a longitudinal sectional view through part of a first embodiment of an apparatus in accordance with the present invention; Fig. 2 is a cross-sectional view taken along the line IIllofFig.1; Fig. 3 is a development of a planetary spindle arrangement with respect to a central spindle forming part of an apparatus similar to that shown in Figs. 1 and 2 and as would be seen taken along the line Ill-Ill of Fig. 2, the modification being that there are more planetary spindles shown in this Figure, some of which are shorter than those shown in Figs. 1 and 2; ; Fig. 4 illustrates a portion of a further embodiment of the invention in which some of the planet spindles have flights which only extend over part of their length; Fig. 5 shows a vertically disposed embodiment of an apparatus in accordance with the present invention and which has a discharge screw conveyor provided at the output end thereof; and Fig. 6 shows a horizontally disposed embodiment of an apparatus in accordance with the present invention and which has a feed screw conveyor provided at the input end thereof.
Description of Preferred Embodiments A part of one embodiment of an apparatus for homogenising and working the ingredients of foodstuffs is schematically shown in Figs. 1 and 2. The apparatus comprises a planetary arrangement of a central spindle 1, and a plurality of planetary spindles 2 disposed therearound. The spindles rotate in a housing in the form of a cylinder 4 provided with a feed hopper 5. A thrust ring 3 is provided at one end of the cylinder 4.
Helical flights la are disposed around the central spindle 1 which are in meshing engagement with helical flights 2a provided on the planetary spindles 2. The central spindle 1 is driven by a transmission mechanism which is driven electrically. Such driving of the central spindle causes the planetary spindles 2 to rotate. The spindles 2 also rotate around the central spindle 1, because the flights 2a thereof mesh with helical flights 4a provided on the internal wall ofthe cylinder 4.
Fig. 3 illustrates a development of a modified embodiment of the planetary spindles 2 and also shows the central spindle 1. In this embodiment, a greater number of planetary spindles 2 are provided and some of the spindles 2 are shorter than the others. When viewed as a development, the ends of the spindles 2 are in a step-wise arrangement at the input end of the apparatus. By so doing, stepped chambers 5 and 6 are formed and these chambers assist in the feeding of the ingredients.
In the embodiment of the apparatus in accordance with the present invention shown in Fig. 4, portions 7 of the helical flights 2a have been removed from the planetary spindles 2. In these regions, the spindle sections 7 are, effectively rollers. Relatively large gaps 8 are formed between the spindle sections 7, the central spindle 1 and the cylinder 4.
Accordingly, the rolling pressure acting on the dough to be kneaded or other food-stuff being processed in these regions is less than the pressure acting thereon in the regions where the spindles 2 are provided with flights 2a. The number of the planetary spindles 2 having these roller-like sections and the length of such sections determines the effect of the treatment on the dough or other foodstuff. Accordingly, by altering these parameters, each batch of the dough to be kneaded or other food-stuff to be processed can be treated in an optimum manner at a low temperature.
The embodiment of the invention shown in Fig. 5 is particularly suitable four fluid food-stuffs such as ingredients which are to be kneaded to form a dough. As in the other Figures, like reference numerals denote like parts and only those features which have not been described hereinbefore will be mentioned in detail.
The ingredients to be kneaded are fed into a feed aperture 9 for the apparatus. They are prevented from agglutinating by means of agitator vanes 11 mounted on a shaft 10.
The ingredients are kneaded between the central spindle 1, the planetary spindles 2 and the wall of the cylinder 4 and are passed into a cylindrical chamber 12 by the conveying action of the helical flights on the spindles 1,2 and the cylinder 4. The chamber 12 comprises a hollow cylinder 14 which has a discharge screw conveyor 13 rotating therein.
A return thread or threaded conveyor 15 prevents the kneaded ingredients from penetrating into the lower portion of the cylindrical chamber 12. This prevents the ingredients from entering and settling in a bearing 16 for the screw conveyor 13.
The discharge screw conveyor 13, the central spindle 1 and the shaft 10, which latter is mounted in a bearing 17, are set in rotational motion by a drive unit (not shown). The drive unit engages with the end 18 of the shaft of the screw conveyor 13, the shaft end being mounted in the bearing 16. The treated food-stuff ingredients are conveyed through an aperture 19 formed in the wall of the hollow cylinder 14 onto a discharge conveyor belt 20.
The housing or cylinder 4 may, as shown in Fig. 5, additionally betemperature-controlled by the provision of temperature-control ducts or conduits 21. These ducts or conduits 21 are used if it is deemed advisable to effect the processing at a predetermined desired temperature.
In the arrangement shown in Fig. 6, a feed hopper 23 is disposed at the inlet end of the apparatus. The hopper 23 causes the ingredients to pass into a housing or cylinder 24 in which a feed screw 22 rotates. The screw exerts slight pressure upon the ingredients. This embodiment permits the throughput of the material through the arrangement to be increased up to a limit which is determined and controlled in dependence upon the maximum processing temperature of the ingredients.

Claims (8)

CLAIMS 1. An apparatus for homogenising and working food- or feed-stuffs such as dough, comprising a planetary arrangement of spindles rotatable within a hollow-cylindrical housing, the planetary arrangement comprising a central spindle provided with at least one helical flight, a plurality of planetary spindles which are disposed uniformly around the central spindle and are each provided with at least one helical flight, the at least one helical flight on the central spindle engaging with the at least one helical flight on each of the planetary spindles, the at least one helical flight on each of the planetary spindles engaging with at least one helical flight disposed on the internal surface of the hollowcylindrical housing, the housing having an inlet end and a discharge end, a thrust ring being disposed within the housing at the discharge end thereof for absorbing the return pressure of the planetary spindles, the central spindle being drivable. 2. An apparatus as claimed in claim 1, wherein the plurality spindles are of differing lengths relative to the length of the central spindle so that the ends of the planetary spindles are stepped at the inlet end of the apparatus. 3. An apparatus as claimed in claim 1 or 2, wherein the at least one helical flight on at least one of the planetary spindles is partially omitted to provide a spindle section with a roller-like external surface region. 4. An apparatus as claimed in any one of claims 1 to 3, wherein the housing is disposed horizontally and includes a feed aperture fed by a feed hopper. 5. An apparatus as claimed in any one of claims 1 to 3, wherein the housing is disposed vertically and is provided, at its upper end, with a feed hopper having a size corresponding to the free crosssection of the housing, agitator vanes being disposed in the feed hopper and being secured to a shaft which is connected to the central spindle, a discharge screw conveyor rotatable within a housing disposed at the lower end of the housing in which the planetary arrangement of spindles are located, and being connected to the central spindle, a return thread or threaded return conveyor being disposed below the discharge screw conveyor, the housing for the discharge screw conveyor being provided with at least one discharge aperture for the material being processed, the discharge screw conveyor and the shaft carrying the agitator vanes being disposed in bearings, and the discharge screw conveyor being drivable. 6. An apparatus as claimed in claim 1, wherein a hollow-cylindrical housing is disposed at the inlet end of the housing in which the planetary arrangement of spindles are located and has an internal diameter corresponding to the internal diameter of said housing, the two housings being flange-connected, a feed screw conveyor which is drivable and which is connected to the central spindle being disposed and rotating within the hollow-cylindrical housing. 7. An apparatus for homogenising and working ingredients for food- and feed-stuffs such as dough as claimed in claim 1, constructed and arranged to operate substantially as hereinbefore described with reference to the accompanying drawings. Amendments to the claims have been filed, and have the following effect: New or textually amended claims have been filed as follows:
1. A method of homogenising and working foodor feed-stuffs such as dough, comprising the steps of feeding the food- or feed-stuffs into an inlet of a planetary arrangement of spindles rotatable within a hollow-cylindrical housing, the planetary arrangement comprising a central spindle and a plurality of planetary spindles disposed uniformly around the central spindle, each spindle being provided with at least one helical flight wherein the at least one helical flight on the central spindle engages with the at least one helical flight on each of the planetary spindles and the at least one helical flight on each of the planetary spindles engages with at least one helical flight disposed on the internal surface of the hollow-cylindrical housing, subjecting the food- or feed-stuff to a rolling, lowtemperature Kneading action between the flights of the central spindle and the planetary spindles and between the flights of the planetary spindles and the at least one internal flight of the housing, relieving the pressure acting on the food- or feed-stuff by providing a thrust ring in an outlet region for the food- orfeed-stuff and discharing thefood-orfeed- stuff.
2. A method as claimed in claim 1, wherein the feeding of the food- or feed-stuffs is effected substantially in a batchwise manner by forming the planetary spindles of differing lengths relative to the length of the central spindle so that the ends of the planetary spindles are stepped in the feed end of the apparatus.
3. A method as claimed in claim 1 or 2 wherein the amount of heat produced in the food- or feed-stuff by the kneading action is reduced by omitting at least one helical flight on at least one of the planetary spindles to provide a spindle section with a roller-like external surface region.
4. A method as claimed in any one of claims 1 to 3, wherein the food- or feed-stuff is fed from a feed hopper th rough a feed aperture into the housing which is disposed with its longitudinal axis extending substantially horizontally.
5. A method as claimed in any one of claims 1 to 3, wherein the housing is disposed vertically and the food- or feed-stuff is fed into the housing through a feed hopper having a size corresponding to the free cross-section of the housing, the food- or feed-stuff being subjected to agitation in the feed hopper by means of agitator vanes secured to a shaft connected to the central spindle to prevent agglutination thereof, and the discharge of the processed food- or feed-stuff being effected by means of a discharge screw conveyor rotatable within a further housing disposed at the lower end of the housing in which the planetary arrangement of spindles are located, the conveyor being connected to the central spindle, a return thread or threaded return conveyor being disposed below the discharge screw conveyor, the housing for the discharge screw conveyor being provided with at least one discharge apertureforthe processed material.

A method as claimed in claim 1, wherein the food- orfeed-stuffs are subjected to the effect of pressure at the inlet of housing in which the planetary arrangement of spindles are located by a feed screw conveyor which is drivable and which is connected to the central spindle disposed and rotating within the hollow-cylindrical housing.
7. A method for homogenising and working ingredients for food- and feed-stuffs such as dough as claimed in claim 1, substantially as hereinbefore described.
8. An apparatus when used for carrying out the method as claimed in claim 1 comprising a planetary arrangement of spindles rotatable within a hollow-cylindrical housing, the planetary arrangement comprising a central spindle provided with at least one helical flight, a plurality of planetary spindles which are disposed uniformly around the central spindle and are each provided with at least one helical flight, the at least one helical flight on the central spindle engaging with the at least one helical flight on each of the planetary spindles, the at least one helical flight on each of the planetary spindles engaging with at least one helical flight disposed on the internal surface of the hollowcylindrical housing, the housing having an inlet end and a discharge end, a thrust ring being disposed within the housing at the discharge end thereof for absorbing the return pressure of the planetary spindles, the central spindle being drivable.
