Abstract
A method of producing a powdered sweetened condensed milk comprises the mixing of the required amount of sugar and any other ingredients such as glucose with fresh milk and heating same to produce condensed milk. The condensed milk is cooled and dried in trays in a vacuum oven at from 100 DEG F to 400 DEG F to produce a dry crumb which is then powdered.
Description
SPECIFICATION
Powdered sweetened milk and the production thereof
This invention relates to a process for the production of a powdered milk product which embodies sweetening agents and which is particularly adapted to form a powdered version of the well known sweetened condensed milk. It is known to produce powdered milk and then admix it with finely powdered sugars or the like to form a composite sweetened milk powder very often also in admixture with powdered coffee, tea or other flavouring agents. However, it has, as far as applicant is aware, not been possible to reproduce in powdered form the commonly known condensed milk.
It is accordingly the object of this invention to provide a powdered milk product which will be substantially equivalent to conventional sweetened condensed milk.
In accordance with this invention there is provided a method of producing a sweetened powdered milk product comprising admixing the required quantities of milk and sugar and optionally glucose, heating the mixture to form condensed milk in known manner, placing the condensed milk thus formed in receptacles and allowing it to cool, placing the receptacles in a vacuum oven at a temperature of between 100"F and 400"F for a period of from one to ten hours or until the condensed milk is in the form of substantially dry crumbs, and finally subdividing the crumbs to form a powdered milk product.
It will be understood that the relevant quantities of milk, sugar and glucose can be varied according to requirements.
In one test of the method of this invention a mixture was made of 510 gallons of fresh milk, 463 Kg. sugar (i.e. 0,91 Kg. per gallon of milk) and 361 Kg of glucose. In a second and later test, the glucose was omitted completely and the quantity of 510 gallons of fresh milk was mixed with 490 Kg. sugar (i.e.
0,96 Kg. sugar per gallon of milk). In each case the mixture was heated in the usual way to form condensed milk and the condensed milk thus formed was placd in trays and allowed to cool for a period of between 4 and 1 6 hours. The trays were then placed in a vacuum oven for a time sufficient to ensure that the water content of the mixture was substantially removed to leave a dry crumb product.
The crumb products were then placed in a crumb breaker followed by grinding in a mill to a fine powder.
It was found that when this powder is mixed with water in suitable proportions condensed milk results in a highly satisfactory manner. Clearly the condensed milk can also be simply added to tea or coffee in its powdered form without first mixing it with water.
It is considered that the provision of a powdered condensed milk as above described will be highly useful in the market place and will be attractive to many persons.
It will be understood that the exact proportions of the ingredients can be varied as may be required and according to particular properties required of the final powder. Thus, as indicated by the two tests carried out, the glucose may be omitted entirely or may be present in any proportion calculated to result in an acceptable powdered product. In general, however, an appreciable cost saving is envisaged by omitting the glucose.
The ratio of milk to sugar can also be varied as required. However, applicant's background work has indicated that best results are achieved when from 400 to 600 Kg. and especially 450 to 500 Kg. of sugar are employed per 510 gallon batch of fresh milk; i.e.
from about 0,78 to 1,18 Kg. per gallon and especially from 0,88 to 0,98 Kg.
The invention is thus applicable within wide limits of quantities of ingredients.
The invention therefore provides a simple yet effective process for producing powdered sweetened condensed milk.
Having now particularly described and ascertained the nature of my said invention and in what manner the same is to be performed, I declare that what I claim is:
1. A method of producing a sweetened powdered milk product comprising admixing the required quantities of milk and sugar and optionally glucose, heating the mixture to form condensed milk in known manner, placing the condensed milk thus formed in receptacles and allowing it to cool, placing the receptacles in a vacuum oven at a temperature of between 100'F and 400'F for a period of from one to ten hours or until the condensed milk is in the form of substantially dry crumbs, and finally subdividing the crumbs to form a powdered milk product.
2. A method as claimed in claim 1 in which the receptacles are in the form of trays.
3. A method as claimed in either of claims 1 or 2 in which there is used about 0,78 to 1,1 8 Kg. of sugar per gallon of milk.
4. A method as claimed in claim 3 in which there is used about 0,88 to 0,98 Kg.
of sugar per gallon of milk.
5. A method as claimed in any one of the preceding claims in which the glucose is omitted entirely.
6. A method as claimed in claim 1 and substantially as herein described and exemplified in either specific test.
7. Powdered sweetened condensed milk whenever made by a method as claimed in any one of the preceding claims.

Claims (7)
1. A method of producing a sweetened powdered milk product comprising admixing the required quantities of milk and sugar and optionally glucose, heating the mixture to form condensed milk in known manner, placing the condensed milk thus formed in receptacles and allowing it to cool, placing the receptacles in a vacuum oven at a temperature of between 100'F and 400'F for a period of from one to ten hours or until the condensed milk is in the form of substantially dry crumbs, and finally subdividing the crumbs to form a powdered milk product.
2. A method as claimed in claim 1 in which the receptacles are in the form of trays.
3. A method as claimed in either of claims 1 or 2 in which there is used about 0,78 to 1,1 8 Kg. of sugar per gallon of milk.
4. A method as claimed in claim 3 in which there is used about 0,88 to 0,98 Kg.
of sugar per gallon of milk.
5. A method as claimed in any one of the preceding claims in which the glucose is omitted entirely.
6. A method as claimed in claim 1 and substantially as herein described and exemplified in either specific test.
7. Powdered sweetened condensed milk whenever made by a method as claimed in any one of the preceding claims.
