530. Moore, C. C. Jan. 8. Fruit and vegetable preparations are obtained from succulent vegetable materials, such as starchy tubers and roots, like potatoes, cassava, sweet potatoes, artichokes, yams, &c., and starchy fruits, such as bananas, breadfruit, &c., in connexion with the treatment thereof to obtain starch. The main treatment consists in drying them, usually after a preliminary comminution or subdivision, and then dry grinding and treating by wet methods to obtain starch milk and to recover starch therefrom. With dry, very fine material the amount of water required is much diminished, and, correspondingly, the concentration of the waste effluent from the starch tables is much increased, rendering easier its concentration for human or animal food. A short steep, preliminary to making the milk, is sometimes desirable, particularly with potatoes; the steep liquor may be drawn off and concentrated, to serve as a raw material for making human food. The steep liquor, or effluent from the tables, or both together, may be evaporated down directly, or be filtered, the clear liquor concentrated to a syrup, the insoluble matters added, and the whole dried.
