Abstract
Pectous materials suitable for making jellies, &c. are produced by removing all other substances, except cellular tissues, from fruits, &c., by means of solvents. The materials to be treated, such as apples, oranges, lemons, grapes, carrots, beets, hemp, and jute are dried, ground, and treated with solvent, preferably ethyl alcohol, but chloroform, benzol, and petroleum ether may also be used. The mixture is then filtered, and the dried residue constitutes the required material and can be mixed with fruit juices to make jellies.
