157,862. Luers, H. Dec. 17, 1919, [Convention date]. Caramel substitutes.--A colouring material for beer &c. is produced from an aqueous extract of malt germs and a saccharine substance. The sancharine substance may be an extract of malt, which is mixed with the extract of the germs and concentrated, the concentrated material being heated to 100‹ C. or rather over, temperatures over 150‹ C. being deleterious. Other saccharine liquids may also be used. Another method consists in steeping malt in the germ extract, saccharifying, and heating to 100‹ C. or slightly over.
