Abstract

1472578 Sterilizing liquids CENTRE DE RECHERCHES ET DE DEVELOPPEMENT TECHNIQUES PRODUITS ALIMENTAIRES 20 June 1974 [20 June 1973 19 Oct 1973] 27450/74 Heading A2D [Also in Division C6] A fermented liquid e.g. beer, is produced under sterile conditions from constituents which have been previously sterilized and in a plant protected against any introduction of foreign micro-organisms. Thus, concentrated wort and bittering substances are sterilized by direct injection of vapour into the medium to achieve flash sterilization and homogenisation at 100-170‹C for 3 seconds - 30 minutes, sterile compressed air or oxygen is used to aerate boiled, pre-sterilized wort and to deliver it to a precipitate separator, prior to fermentation. The other main components of apparatus have provision for the injection thereinto of sterilizing fluid. A full description of the production of beer under the required conditions of sterility is given. In the described process, clarified hopped wort is fermented in a tower by yeast attached to an inert carrier e.g. diatomaceous material or granulated polyvinyl chloride, and the organoleptic properties of the resulting beer are improved by treating the beer with proteolytic enzymes attached to an inert carrier e.g. brick, silica, glass, sand, silica-based compounds including halogenated silica and amino silica, and activated clay. The carriers occupy substantially the while internal volume of fermentation and enzymatic treatment towers, respectively.
