1451446 Meat product BUSH BOAKE ALLEN Ltd 2 Oct 1973 [18 Aug 1972] 38758/72 Heading A2B A meatburger comprising not more than 15 wt % suet contains 6-12 wt % of a mixture of 20-80 parts wt of albumin, preferably egg albumin, and 80-20 parts wt of starch, preferably pregelatinised maize starch. The meat may be beef, pork, or poultry. The burgers show a greatly decreased shrinkage, or even an expansion, upon cooking.
