Abstract

1441967 Liquid heating vessels; deep fat or oil fryers ELECTROWAY Ltd 24 May 1974 [1 June 1973] 26262/73 Headings F4X and F4W An electrical deep fat or oil fryer comprises a main heater and an auxiliary heater, a first sensor positioned at or immediately below a predetermined minimum fat or oil level, a heater switch responsive to the sensor whereby the auxiliary heater alone is switched on when the sensor detects a temperature below a predetermined switch-over temperature and the main heater alone is switched on when the sensor detects a temperature above the switch-over temperature, and a cut-out switch for both heaters responsive to a second sensor which detects the surface temperature of the auxiliary heater. A control thermostat responsive to a third sensor, or alternatively to the first sensor, maintains the fat or oil at a cooling temperature during normal use. The second sensor is clamped to the or a heating element of the auxiliary heater. A fat or oil level warning light is actuated by the first sensor when the auxiliary heater is operative. A further sensor or the second sensor may cause the same or a different cut-out switch to operate when the temperature of the fat or oil rises above a predetermined safety temperature. In operation, the fat or oil is heated first by the auxiliary heater and then by the main heater to the cooking temperature. If the fat or oil level falls below the first sensor, said sensor detects a temperature below the switch-over temperature. The main heater is then switched off and the auxiliary heater switched on and attains a surface temperature sufficient to cause the cut-out switch to operate before the fat or oil level drops below either heater. The switch-over temperature is between 50‹ and 150‹ C. below the cooking temperature, e.g. 100‹ C., the cut-out temperature is from 230‹ to 300‹ C., e.g. 275‹ C., and the safety temperature is from 220‹ to 230‹ C.
