Abstract

1414986 Fractionating fatty oils UNILEVER Ltd 22 Feb 1973 [24 Feb 1972 (2) 12 Sept 1972 (2)] 8647/72 8648/72 42393/72 and 42397/72 Heading C5C A mixture of liquid and crystalline triglycerides of fatty acids is fractionated by dispersion in water in the presence of two surfaceactive agents of which one has an HLB value above 10 and the other an HLB value below 5 in such concentration that the interfacial tension is below 0À5 dyne cm<SP>-1</SP>, and separating the liquid fraction from the water and dispersed crystalline fraction. The second surfactant may be a monoglyceride of an unsaturated fatty acid, e.g. oleic, linoleic or linolenic, and may be added to the mixture of triglycerides, which may be groundnut oil, partly hardened soyabean oil, palm oil, cottonseed oil, butter or butter olein. The first surfactant may be an alkali-metal decyl sulphate, a water-soluble soap of a saturated fatty acid of 6-10 carbon atoms or a watersoluble soap of an unsaturated fatty acid, e.g. oleic, linoleic or linolenic. The two surfactants may both be added to the oil, or the first surfactant may be generated in situ in the oil, e.g. by adding potassium carbonate to a mixture of triglycerides that contains free fatty acids. They are preferably added to the oil before crystallization, and the aqueous phase is preferably added after crystallization. This aqueous phase may contain a salt dissolved in it, e.g. NaCl, K 2 SO 4 , NaNO 3 , NH 4 NO 3 or KCl. Separation may be by centrifuge.
