1371664 Cereal preparation NABISCO INC 23 Dec 1971 59999/71 Heading A2Q An instant oat cereal product, requiring only the addition of hot water to prepare it for consumption, consists of 85% to 96.5% by weight of processed oats and 3.5% to 5.5% of an oat fraction having a protein content greater than 20% by weight. The processing of the oats may involve toasting, cooling, pearling in which the outer layer or pericarp is removed by abrasion, cutting into pieces, sifting, hydration by the addition of water, tempering by allowing the oat pieces to remain for a period of 30 to 90 minutes at a temperature of 65‹ to 85‹F in sealed bins &c, steaming, rolling to form flakes, and drying. The high protein oat fraction may be obtained by a process in which the relatively high starch fraction is removed by dehulling and then pulverising oats to a particular fineness, aspirating the pulverised oats and then finely dividing the coarse fraction. The product may also contain further constituents such as sugar, salt, other flavourings, minerals, vitamins, freeze dried fruits, oils, butylated hydroxytoluene &c.
