1312473 Protein concentrate GRIFFITH LABORATORIES Ltd 24 April 1970 [12 May 1969] 19951/70 Heading C3H An edible vegetable protein concentrate having natural structure and texture consists essentially of vegetable protein meal which is insoluble at its isoelectric pH and which, having been adjusted to pH 5À5-10À5 and dried, is characterized by: (a) having been freed of undesired taste; (b) good protein solubility (nitrogen solubility index of at least 15% by weight); (c) good water-absorption and waterretention properties; (d) good water-binding properties; and (e) at least 60% by weight protein on a dry basis. The protein may be a soy protein or peanut protein concentrate.
