Abstract
1308690 Proteinaceous beverages DAYLIN LABORATORIES Inc 22 Sept 1970 45033/70 Heading C6E [Also in Division C3] A process of preparing a high protein, mildly acidic beverage comprises effecting controlled proteolytic hydrolysis of a beverage base (can be water) containing added foreign protein with dispersed proteolytic enzymes (specified), inactivating the proteolytic enzyme (by pasteurization) when the resultant hydrolyzed protein is free of objectionable or meaty taste and odour and is substantially soluble in an acidity which is suitable for a beverage, and adjusting the liquid content of the beverage base to that of a mildly acidic beverage in which the hydrolyzed protein is lastingly dispersed in a storage-stable liquid wherein the hydrolysate does not contribute a turbidity or precipitate to the beverage. Protein materials: gelatine, casein, egg albumen and/or soya. The hydrolysis, which involves heating at a temperature of 33-70‹ C. for a maximum period of an hour, may be carried out by adding both protein and proteolytic enzymes directly to fruit or berry juice. The product of the hydrolysis may then be concentrated and frozen for storage and diluted later. Alternatively, the reaction may take place in aqueous medium and the juice added for adjusting the liquid content. The beverage product typically contains between 1 and 8% by weight of hydrolyzed protein and exhibits a pH of 2À5-5À0. Formulations of fruit and non-fruit blends carbonated and non- carbonated, are disclosed.
