1283593 Drying proteinaceous material SLIMCEA Ltd 19 Nov 1970 [28 Nov 1969] 58215/69 Heading A2D A process for drying wet wheat gluten comprises the steps of (a) comminuting the wet gluten by a cutting process to form particles of wet gluten (b) coating the wet gluten particles with a dry powdered moisture transfer agent and (c) drying the coated particles. The step (a) may be carried out using a bowl chopper. The agent used in step (b) may be dry powdered wheat gluten, diatomaceous earth or starch. The drying step (c) may be carried out in a rotary louvre drier. The coated wet gluten of step (b) may in carrying out step (c) be mixed with more moisture transfer agent.
