A temperature indicator for frozen foodstuffs which gives an irreversible indication of the temperature of the foodstuff has risen above a predetermined limit during storage comprises a closed thin-walled vessel 1 made of a brittle material e. g. glass or polystyrene, and containing a liquid 2, preferably aqueous, which expands when solidifying to break the vessel 1, a porous material 3, e. g. cotton wool, surrounding the vessel 1 and enclosed in a transparent closed jacket 4, and an indicator 5 e. g. a water soluble dye impregnated on a disc of filter paper, so that if the ambient temperature rises above the freezing point of the liquid 2, the porous material 3 will become coloured due to the interaction of the liquid and the dye of the indicator. The liquid 2 is preferably an aqueous solution of an inorganic or organic material and non-toxic. In particular salts of sodium, potassium, ammonium or calcium may be used preferably as a eutectic mixture which melts at a precisely defined temperature. Inplace of the disc of dye-impregnated filter paper, the dye may be loose in the jacket 4, or alternatively may be dissolved in the liquid in the vessel 1. In some cases the dye itself may function as the substance depressing the freezing point of the liquid, or in cases where a coloured inorganic salt is used the dye may be dispensed with completely. The liquid from the vessel 1 may also be such as to react with a substance added to the porous material 3 leading to a visible change e. g. the liquid may be alkaline and the porous material contain phenolphthalein. Any dry dye present in the jacket 4 may be masked by white blotter paper so as to give a clearer indication of the melting of the contents of the vessel 1.
