Abstract

1,244,257. Forced convection oven. GAS COUNCIL. 27 Jan., 1970 [31 Jan., 1969], No. 5403/69. Heading F4W. A gas-heated forced convection oven has a gas burner 9 firing into a duct 5 leading to the cooking or heating zone, a fan 3 for circulating the gases through the cooling zone, and a deflector 12 for directing gases issuing from the fan 3 away from the burner 9 into a throat 11 downstream of the burner to mix with the fresh combustion gases. In an oven with two burners, the gases pass up duets 5 at either side to enter the oven through perforated side walls 2, and are withdrawn at the back. Excess gases escape from an outlet only slightly above atmospheric pressure. The throats 11 form Venturi nozzles to improve the mixing of the gases, and the arrangement prevents downdraught affecting the burners.
