Abstract

A process for preparing a solid food product comprises (a) mixing protein and carbohydrate in the presence of air to form a porous cellular non-crystalline material (b) drying said porous material to less than 5% by wt. water and (c) converting the dried material to granular or powder form (d) mixing the granules or powder with fat or fat-containing substance, and (e) moulding the granules into the desired shape. The fat is one which is capable of melting in the mouth. The protein may be supplied by egg. The carbohydrate may be sucrose, dextrose, lactose, soya bean, wheat flour, corn starch or methyl cellulose. The fat or fat-containing sunbstance may be coconut oil, cheese or butter. Other ingredients include skim milk, mineral salts, vitamins and flavourings. The granules may be separated into coarse and fine fractions, the fine fraction mixed with fat, minerals, vitamins and flavourings, and the resultant mixture moulded alone or in admixture with the coarse fraction. The food product may be in the form of a bar comprising easily separable pieces.
