Filled strips of dough are produced by separately rolling two strips T1, T2 of dough between pairs of driven rollers 2, 3, applying filling material F continuously, in a strip 8 formed between endless driven belts 6, e.g. between the two dough strips which are then brought together in a gap between a pair of driven rollers 3, and subsequently passing it through one or more calming sections, where it is stretched, each calming section comprising a belt 11 or 16 running slightly faster than the issuing speed of the strip, a reversing roller 12 or 18 and a driven belt 13 or 17 running at a slightly faster speed still, a further set of rollers 15 or 20 being disposed after each calming section to reduce the thickness of the strip. The calming sections are said to improve the contact between the layers of dough and the filling because of the differential speeds of the dough layers, and to allow the composite strip to recover for forming new gases. Gear boxes 22, 23 determine the relative speeds of the belts 11, 16.
