Abstract

Apparatus for forming a product of a filler material encased in an envelope of a covering material comprises means for extruding a sleeve of covering material around a core of filler material and means for continually severing portions of the extrudate so that each portion comprises a core of filler material completely surrounded by covering material. The apparatus is intended for use in enveloping a food product in an outer casing of, for example, dough or batter. As shown, filler material 25 is fed from a hopper 1 down the central passage of rotating extruder screw 3. The covering material 26 is fed by feeding device 10 to cylinder 6, down which it is forced by extruder screw 4 to form a sheath surrounding the filler material 25. The thickness of the covering material is determined by a ring 5 housed at the base of the cylinder 6. The cutting device comprises a pair of rotary cutters 12 each comprising a "cup-shaped" body having a spiral blade of varying radius and 1¢ turns or less, the edge of the blade being rounded and the underside of the blade being rectilinear and varying from vertical in its highest position to horizontal in its lowest. The blades rotate in opposite directions with the same angular speed. A dish 18 is situated below and between the blades and is adapted for rotational and up-and-down movement. The shape of the cutter blades (which is precisely specified) is such that as the extruded material passes between the cutter blades, the filter material stream is broken and the covering layer is closed around it. The finished product is pushed off to dish 18 by a blade 23 mounted on one of the cutters and is removed by a conveyer 24.
