[Also in Division C2] A seasoning composition contains a 2-(lower alkoxy) inosine-5<SP>1</SP>-monophosphate of the formula (I) wherein R represents methoxy, ethoxy, n-propoxy or iso-propoxy or a physiologically acceptable salt thereof (e.g. Na<SP>+</SP>, K,<SP>+</SP>, Ca<SP>2+</SP>, NH 4 <SP>+</SP>, cyclohexylamine salt) optionally together with monosodium glutamate, disodium-5<SP>1</SP>-guanylate, sodium succinate, or disodium-5<SP>1</SP>-inosinate.
