Abstract

1,213,929. Meat product. QUAKER OATS CO. OF CANADA Ltd. 8 May, 1969 [9 May, 1968], No. 23537/69. Headings A2B, A2D and A2E. Meat, including fish and poultry, is comminuted to give a pulp-like emulsion, the temperature of which is then lowered until the emulsion is in a frozen or semi-frozen state, the then frozen emulsion is diced, and these dices are then covered with an edible liquid, for example a gravy, having a temperature of at least 190‹F. whereby the proteins in the surface of the dice are heat-set, and the dice are subsequently cooked, if desired after canning, or packing into glass containers, which are sealed prior to the cooking and thus also sterilising. The pulp may have air or inert gas incorporated therein. The emulsion may include a meat binding agent, for example a cereal or milk powder. In one form, the emulsion is frozen in tubular casings.
