Abstract

1,195,137. Apparatus for cooking in fat. PROCTER & GAMBLE CO. 31 July, 1968, No. 36542/68. Heading A4D. [Also in Divisions B5 and B8] In a process for making uniformly shaped crisp-like edible dough products, dough pieces are located between apertured moulding surfaces which are passed through a reservoir of hot frying fat. The dough pieces are cut from an intermittently moving web 12, Fig. 1, by a device 15 below which moves a series of moulds 24, 25 constructed as shown in Fig. 4 and carried by continuously moving chains. A return belt 22, Fig. 1, is provided for the scrap web of dough. The mould parts 25 are moved for mould closing and opening by the action of cams 26, 28 and the closed moulds move through a fat containing reservoir 35. The crisp-like products are deposited on a delivery belt 37 which moves below a salt dispenser 39 comprising a rotary pocketed roller located between a hopper and a delivery funnel which is fed with salt from pockets under the action of air blasts. An electric motor drives the belts and chains through sprocket gearing which includes interrupted gearing in the drive to the belts and the crank mechanism for operating the cutting device which comprises co-operating male and female elements which can be connected to a source of vacuum or air pressure for retention and delivery of the cut pieces.
