Preparation of dextrose containing products by enzymatic hydrolysis of unrefined starch containing material comprising the steps of milling said material and freeing it from germs and husks, if any, slurrying the unrefined milled product in water, heating the slurry and treating it with a liquefaction enzyme to release and liquify the starch therein and subjecting the liquefied product thus obtained to a saccharification by acid or one or more enzymes. The mixture of liquefaction enzyme and slurry of unrefined milled starch containing material is subjected to a strong pulsating progressive movement while being heated in a tube converter through which the slurry is pumped by means of a pulsation pump. The enzyme treatment to release and liquefy the starch is preferably effected at the optimum liquefaction temperature for the enzyme used and may be carried out in two steps by heating the starch to a temperature above 100‹ C. after the initial addition of liquefaction enzyme and then cooling the product and adding a further amount of liquefaction enzyme. The liquefaction enzyme, particularly alpha amylase, may be added to the slurry of unrefined milled starch containing cereal immediately before or during the heating of the said slurry preferably by means of a diaphragm pump which is synchronized with the diaphragm pump used to pump the slurry through the converter tubes. The saccharification may be carried out in one or more stages using acid or one or more enzymes such as amylo glucosidase and/or malt enzyme or fungal amylase. The starch containing cereal/material may be wheat, rice, tapioca, potatoes or preferably maize grains which may be steeped in water and milled before the slurry is treated with liquefaction enzyme. According to preferred embodiments of the invention the enzyme liquefied product is either divided into two main fractions and one of the said fractions is subjected to further enzymatic liquefaction to D.E. 20-35 while the other is subjected to saccharification to D.E. 60-85 and the two fractions are mixed preferably in the weight ratio 2 : 1 to 3 : 1 respectively; or further liquefied to D.E. 20- 35 before being divided into two or more fractions at least one of which is subjected to saccharification to D.E. 60-85 and the fractions are thereafter mixed together. The preparation of dextrose containing syrups of various compositions is described.
