Heading B1Q. {Also in Division C6] The wort of a mash entering an extraction cylinder 20 through an inlet 11, is pressed out from the grains in a screw press 15 and the grains are sparged with liquid introduced at inlet 25. The spent grains descend through an opening 21 in filter plate 23, whenever the closure 22 is released, and are removed from the bottom of the cylinder by a screw conveyer 26. The wort and sparge liquor are taken to centrifuges 19, 30, for the removal of protein sludge, except for the part that is recycled through line 29 and sprayed on to the bed of grain. The protein sludge may be mixed with sparge water and added to the extraction cylinder at a position where the sugar content in the cylinder is the same as that of the liquid being added. Alternatively, the protein sludge is extracted with hot water and the liquor obtained is used partly as mash water and partly for sparging.
