Abstract

A chopped meat product comprises a major proportion of chopped meat intimately mixed with 1-20 wt. per cent. of a binder being predominantly substantially pregelatinised rice particles having a specific gravity of 0.25-0.80. Water, seasoning, tomato juice, and bouillon may also be added. The product may be used in the preparation of patties, sausages &c.
