In a method and apparatus for removing shells from shrimps or prawns, e.g. headless shrimps, the shell of each shrimp is securely gripped along its ventral side, then ruptured near the tail segment, as by being overstretched or cut, and then slit longitudinally along the back. The fleshy body, with the tail attached, is then displaced longitudinally, e.g. tail-first, in respect to the gripped shell, and thus separated therefrom. The dorsal slit along the shell may be continued almost through the body, so that the resulting tail-on body is in a cloven or "butterfly" form.
