Abstract

A plant for malting grain has a stationary tank B and apparatus for conducting a succession of alternate steeping and germinating operations in the tank, which apparatus includes an air compressor C for introducing air under pressure, usually at between 5 and 10 lbs/sq. in., through nozzles g in the tank so as to agitate the mixture of grain and water during steeping, and an air conditioning apparatus D from which air of the requisite temperature and humidity is passed through the grain for germination, the direction of flow of the conditioned air through the grain being regulated by valves V3, V7, V6 and V8. Th germinated grain is dried and cured by a flow of warm, dry air propelled by a fan (not shown) in a furnace E. The grain rests on either a perforated plate e, which is divided into two sections pivoted for downward movement about an axis e, or a conical lining spaced from the conical base of the tank B. Steeping water is kept at a desired temperature in a float controlled tank A until required in tank B. The water inlet to tank B includes a spreading device f. Scum and dirt collected on the surface of the water in tank B during the steeping are flushed out by opening valves V9 and V10. The water supply is pre-heated in heat exchanger i by exhaust gases from the curing operation of air passed through the cured grain, and in heat exchanger j by waste hot steep water circulated by a pump F. The conditioned air may be recirculated. A number of stationary tanks B may be serviced from a common water supply, air compressor, air conditioner and furnace, and the cycles of operation in the various tanks may be subject to automatic control. The following sequence of operations is disclosed: (1) steeping grain for 6 hours at 18 DEG C. with intermittent periods of a few minutes each for aeration with compressed air, (2) germination for 22 hours at 18 DEG C., (3) steeping for 30 minutes at 18 DEG C. with aeration as in (1) above, (4) germination for 22 hours at 18 DEG C., (5) steeping for 75 minutes at 40 DEG C., aerating where necessary to loosen the grain, (6) germination for 44 hours at 18 DEG C., and (7) curing the grain using air first at about 40 DEG C. but rising steadily to 80 DEG C. <PICT:1044029/C6-C7/1>
