Abstract
A margarine oil has incorporated therein such an amount of a triglyceride mixture, the combined fatty acids of which contain at least 10% by weight of arachidic and/or behenic acid, that the proportion of combined arachidic and/or behenic acid is 0.08-1.5% by weight of the margarine oil. This is preferably achieved by adding 0.2-2.5% of a triglyceride mixture obtained by hydrogenating to an iodine value of less than 30 one or more of rapeseed, mustard seed, wallflower seed, nasturtium seed or marine oil. The margarine oil used may have a relatively high content of palm oil, 10-40% or 10-60% if interesterified, coconut oil, 5-30% or 10-60% if interesterified, and/or palm kernel oil 5-30% or 10-60% if interesterified, which may be interesterified and/or may contain tallow (0-30%), lard (0-100%), soyabean oil (0-100%), cottonseed oil (0-100%), maize oil (0-100%), sunflower seed oil (0-100%) or ground nut oil (0-100%), lightly hydrogenated where necessary.
