La présente invention concerne donc notamment un procédé tel que décrit ci-dessus où :
- On dispose d’une matière première de protéine(s) végétale(s) sèche sous une forme quelconque donnée ;

- On procède à la réhydratation de cette quantité de matière à l’aide d’eau ou d’un mélange liquide comportant de l’eau ;
- On procède avantageusement à une étape de mélange de la matière précédente pour former une pâte de matière protéique végétale et d'eau ou d’un mélange liquide comportant de l’eau, étape de mélange durant laquelle on procède le cas échéant à un ajout d’ingrédients tels que épices, arômes, matières grasses et/ou autres ingrédients, selon la recette suivie en vue d’obtenir ledit produit alimentaire souhaité ;
- On procède à une étape de formage du produit à une forme désirée à partir de la matière obtenue à l’étape précédente ;
- On procède le cas échéant à une étape de cuisson de la forme ainsi obtenue ou bien on réserve la forme ainsi obtenue en vue d’une utilisation ultérieure, par exemple en vue de sa surgélation/congélation.

- On procède avantageusement à une étape de mélange de la matière précédente pour former une pâte de matière protéique végétale et d'eau ou d’un mélange liquide comportant de l’eau , étape de mélange durant laquelle on procède le cas échéant à un ajout d’ingrédients tels que épices, arômes, matières grasses et/ou autres ingrédients, selon la recette suivie en vue d’obtenir ledit produit alimentaire souhaité ;
- On procède à une étape de formage du produit à une forme désirée à partir de la matière obtenue à l’étape précédente ;
