PRODUIT ALIMENTAIRE COMPORTANT UN BLANC D'OEUF CUIT DUR [1] L'invention concerne un produit alimentaire comportant au moins deux parties dont l'une est du blanc d'ceuf cuit dur et l'autre est une terrine de légumes. L'invention 5 concerne également un procédé de fabrication de ce produit alimentaire. [2] La demande de brevet FR2292440 Al décrit un procédé de fabrication d'un produit alimentaire utilisant les composants de rceuf dur. Ce produit utilise les composants de rceuf dur classique, autrement dit le jaune d'ceuf cuit dur et le blanc d'ceuf cuit dur. Il également évoqué dans cette demande de brevet la possibilité de 10 remplacer le jaune d'ceuf cuit dur par d'autres aliments comme de la chair à saucisse, de la pâte de poisson, ou des légumes. [3] Ayant constaté après des essais de remplacement du jaune d'ceuf cuit dur par une terrine conventionnelle de légumes que celle-ci glissait en dehors du produit alimentaire, il est apparu qu'un solution devait être mise en place pour rendre le 15 produit alimentaire propre à la commercialisation. Les terrines conventionnelles de légumes comportent notamment : - des légumes hachés, et - de la farine et du jaune d'ceuf pour former un liant permettant d'adhérer entre eux les morceaux de légumes de la terrine. 20 [004] Le problème ici n'est donc pas l'introduction de nouvelles substances à l'intérieur de blanc d'ceuf cuit dur mais bien leur adhérence au blanc d'ceuf cuit dur. Dans notre cas, la nouvelle substance introduite est une terrine de légumes. La réponse à ce problème porte aussi bien sur le produit alimentaire lui-même que sur le procédé à appliquer au produit alimentaire afin que la terrine de légumes puisse 25 adhérer au blanc d'ceuf cuit dur à la manière de jaune d'ceuf cuit dur. [5] La partie terrine de légumes et la partie de blanc d'ceuf cuit dur doivent adhérer entre elles avec une force d'adhésion au moins égale à celle du jaune d'ceuf cuit dur sur le blanc d'ceuf cuit dur. Cette adhérence ne doit donc pas nécessairement être beaucoup plus élevée mais elle doit permettre de former des tranches de produit 30 sans que les deux parties ne se séparent de façon à rendre le produit commercialisable. [6] L'invention a donc pour objet un produit alimentaire comportant : - une terrine de légumes contenant au moins 45% en masse de légumes et un liant comestible qui assure la cohésion des morceaux de légumes entre eux, et - un blanc d'ceuf cuit dur qui adhère sur au moins une partie de la périphérie de la terrine de légumes, le blanc d'ceuf cuit étant en contact mécanique direct avec la terrine de légumes, dans lequel la terrine de légumes contient au moins 4% en masse de semoule de blé 5 dur fine ou extra-fine, une semoule de blé dur étant dite « fine ou extra-fine» si 80% des morceaux de grains de blé contenus dans cette semoule ont un exo-diamètre compris entre 150pm et 400pm.. [7] La notion d'exo-diamètre est bien connue en granulométrie. On rappelle simplement ici que le « diamètre de Féret » (Df) est la plus petite distance entre une 10 première droite donnée D1 et une seconde droite D2 parallèle à la droite D1. Ces droites D1 et D2 sont disposées de telle sorte que l'ensemble de la projection orthogonale du morceau de grain dans le plan contenant ces deux droites parallèles soit comprise entre ces deux droites parallèles. De plus, ces deux droites D1 et D2 touchent chacune en un point la périphérie de cette projection orthogonale du 15 morceau de grain. Si l'on fait tourner la droite D1 autour du grain, on trouve une position de la droite D1 pour laquelle le diamètre Df est maximal. La valeur maximale du diamètre Df est l'exo-diamètre. [8] Les déposants ont constaté qu'en intégrant dans la terrine de légume au moins 4 % en masse de semoule de blé dur fine ou extra-fine, l'adhérence entre le 20 blanc d'ceuf cuit dur et la terrine de légumes est suffisante pour permettre de former des tranches de produit, par exemple à l'aide d'un couteau de cuisine, sans que la terrine ne glisse en dehors du blanc d'ceuf cuit dur. Typiquement, l'adhérence ainsi obtenue entre la terrine de légumes et le blanc d'ceuf cuit dur est la même, voir supérieure, à celle qui existe entre le jaune d'ceuf cuit dur et le blanc d'ceuf cuit dur 25 d'un oeuf dur obtenu en faisant cuire, jusqu'à ce qu'il soit dur, un oeuf de poule. [9] Les modes de réalisation de ce produit alimentaire peuvent comporter une ou plusieurs des caractéristiques suivantes : ^ la terrine de légumes contient plus de 7% en masse de semoule de blé dur fine ou extra-fine. 30 [0010] Ces modes de réalisation du produit alimentaire présentent entre outre les avantages suivants : - avoir plus de 7% en masse de semoule de blé dur fine ou extra-fine dans la terrine de légumes permet d'augmenter encore plus l'adhérence de la terrine avec le blanc d'ceuf cuit dur. 35 [0011] L'invention a également pour objet un procédé de fabrication du produit alimentaire ci-dessus, ce procédé comportant : a) la préparation et la mise en forme d'une terrine de légumes contenant au moins 45% en masse de légumes et un liant comestible qui assure la cohésion des légumes entre eux, cette terrine de légumes contenant au moins 4% en masse de semoule de blé dur fine ou extra-fine, ensuite b) à l'intérieur d'un moule, la mise en contact mécanique direct d'un blanc d'ceuf non cuit avec au moins une partie de la périphérie de la terrine de légumes préparée et formée lors de l'étape a), puis c) la cuisson du blanc d'ceuf non cuit, maintenu en contact mécanique direct avec la terrine de légumes par le moule, jusqu'à obtenir un blanc d'ceuf cuit dur qui adhère 10 sur ladite partie de la périphérie de la terrine de légumes. [0012] Les modes de réalisation de ce procédé de fabrication peuvent comporter une ou plusieurs des caractéristiques suivantes : ^ le taux d'humidité, d'une enceinte de cuisson à l'intérieur de laquelle est placé le moule, est maintenu pendant toute la durée de la cuisson de l'étape c) entre 15 20 % et et 100 %; ^ le taux d'humidité est maintenu pendant toute la durée de la cuisson de l'étape c) entre 50% et 100 %; ^ le taux d'humidité est maintenu pendant toute la durée de la cuisson de l'étape c) entre 70% et 100%. 20 [0013] Ces modes de réalisation du procédé de fabrication présentent en outre les avantages suivants : - maintenir le taux d'humidité lors de la cuisson du blanc d'ceuf entre 20 % et 100 % et, de préférence, entre 50 % et 100 % et, encore de façon plus préférée, entre 70 % et 100 % permet d'éviter l'apparition de défauts, tels que des brûlures ou des cloques, 25 sur la face extérieure du produit alimentaire. [0014] L'invention sera mieux comprise à la lecture de la description qui va suivre, donnée uniquement à titre d'exemple non limitatif et faite en se référant aux dessins sur lesquels : - la figure 1 est une illustration schématique, en perspective et en coupe verticale, 30 d'un produit alimentaire comportant une terrine de légumes et un blanc d'ceuf cuit dur - la figure 2 est un organigramme d'un procédé de fabrication du produit alimentaire de la figure 1. [0016] Dans la suite de cette description, les caractéristiques et fonctions bien connues de l'homme du métier ne sont pas décrites en détails. [0017] La figure 1 représente un produit alimentaire 2 comportant une terrine 4 de légumes et un blanc d'ceuf cuit dur 6. [0018] Dans ce mode de réalisation le produit 2 se présente sous la forme d'un barreau de section transversale circulaire. Ici, l'axe de révolution de ce barreau s'étend horizontalement. [0019] Le blanc d'ceuf 6 entoure complètement, dans une coupe verticale, la terrine 4 de légume. La terrine 4 forme ainsi le noyau du produit 2. Le blanc d'ceuf est 10 directement en contact mécanique avec la terrine 4 et la terrine 4 adhère directement sur le blanc d'ceuf 6. [0020] La terrine 4 comporte au moins 45% en masse de légumes et un liant comestible qui assure la cohésion des morceaux de légumes entre eux. La cohésion entre les légumes est suffisante pour que la terrine ne se désagrège pas sous son 15 propre poids en absence de sollicitation extérieure. La masse de légumes dans la terrine représente, de préférence, plus de 55 % ou 65 % de la masse de la terrine 4. Généralement, la masse de légumes dans la terrine 4 est inférieure à 90 % ou 80 % de la masse de la terrine 4. Ces légumes sont présents dans la terrine 4, généralement, sous forme de morceaux obtenus par hachage de légumes entiers. 20 [0021] Ici, le liant de la terrine 4 comprend du jaune d'ceuf en proportion d'au moins 2 % ou 4 % en masse de la terrine 4. La masse de jaune d'ceuf introduit dans le liant reste généralement inférieure à 15 % ou 10 % de la masse de la terrine 4. Ici, lorsque l'on parle de semoule de blé « fine ou extra-fine », on désigne une semoule de blé fine ou une semoule de blé extra-fine ou un mélange des deux si les deux types de semoules de blé sont simultanément présent dans le liant de la terrine 4. Par la suite, sauf indication contraire, le terme « semoule » désigne une semoule de blé fine ou extra-fine. 35 [0024] La semoule doit être intégrée dans le liant dans une proportion correspondant à au moins 4% en masse de la terrine 4 et, de préférence, à plus de 7% en masse de la terrine 4. [0027] Ici, le blanc d'ceuf 6 est du blanc d'ceuf de poule. [0028] Le procédé de fabrication du produit 2 va maintenant être décrit à l'aide de la figure 2. [0029] Lors d'une étape 8, on prépare une mêlée aux légumes à l'aide d'un mixeur 20 connu sous le terme anglais de « cutter » qui est en plus capable de cuire. Plus précisément, dans le mixeur, on mélange les oignons, les poivrons rouges et verts, la semoule, le jaune d'ceuf, le sel, l'huile d'olive, le basilic, l'ail et le poivre. Dans ce mode de réalisation, le mixeur mélange, hache et cuit la terrine de légumes. A l'issue de cette étape on obtient une pâte. 25 [0030] Lors d'une étape 10, on met en forme la pâte obtenue à l'issue de l'étape 8. Dans le cas du produit alimentaire 2, la pâte est passée dans un poussoir de façon à ressortir sous forme d'un barreau de section transversale circulaire. Le poussoir permet d'extruder la pâte fabriquée lors de l'étape 8 pour obtenir un noyau en forme de barreau. Le noyau de terrine de légumes est ensuite congelé. 30 [0031] Lors d'une étape 12, on met en contact direct, à l'intérieur d'un moule, le noyau congelé de terrine de légumes et du blanc d'ceuf cru liquide. Ici le moule est un moule cylindrique de section circulaire. Par exemple, il présente une longueur de 20 cm et un diamètre de 4 cm de façon à mimer les dimensions d'une tranche d'ceuf de poule lors du tranchage du produit 2. Le noyau congelé est placé au centre du moule 35 de sorte que son axe de révolution soit parallèle à l'axe de révolution du moule et séparé de l'axe de révolution du moule par moins de 5 mm. Le blanc d'ceuf cru liquide 3023 130 6 est alors introduit tout autour du noyau de légumes. La viscosité du blanc d'ceuf cru liquide permet de maintenir le noyau congelé centré à l'intérieur du moule. Par exemple, pour faciliter le maintien du noyau congelé au centre du moule, l'axe de révolution du moule est placé verticalement au moins jusqu'au début de l'étape suivante. [0032] Lors d'une étape 14, on cuit le blanc d'ceuf cru liquide placé à l'intérieur du moule directement en contact avec le noyau de terrine. Dans ce mode de réalisation, à cet effet, le moule est plongé dans un bain-marie d'eau bouillante. Cela permet d'éviter de griller le blanc d'ceuf. De plus, en même temps, le moule est entraîné en rotation sur lui-même autour de son axe de révolution de façon à maintenir le noyau de terrine de légumes centré à l'intérieur du produit alimentaire. La vitesse de rotation du moule sur lui-même est constante est, par exemple, comprise entre 1 et 100 tours/minute. [0033] De plus, lors de l'étape 14, l'humidité à l'intérieur de l'enceinte de cuisson où se trouve le moule est maintenue entre 20% et 100% et, avantageusement, entre 50% et 100% et, de préférence, entre 70% et 100% de façon à éviter que la périphérie du blanc d'ceuf ne grille au contact du moule. Dans ce mode de réalisation l'enceinte de cuisson comprend le bain-marie et c'est donc le bain-marie qui maintient ce taux élevé d'humidité. [0034] L'étape 14 permet de durcir le blanc d'ceuf mais aussi de terminer la cuisson de la terrine 4 de légumes. [0035] Après une durée prédéterminée pour que le blanc d'ceuf soit totalement cuit et dur, lors d'une étape 16, le produit alimentaire 2 est démoulé. Par exemple, la durée prédéterminée est supérieure à 5 min ou 10 min ou 20 min. [0036] De nombreux autres modes de réalisation sont possibles. Par exemple, le diamètre du produit alimentaire 2 fini peut être modifié de façon à mimer un oeuf de caille ou un oeuf d'autruche. Le produit alimentaire peut aussi être agencé autrement sans chercher à mimer un oeuf. Par exemple, la périphérie de sa section transversale peut prendre d'autre forme qu'un cercle ou un ovale. Cette périphérie peut aussi être carré ou polygonale. De même, la périphérie de la section transversale de la terrine de légumes peut aussi être différente d'un cercle. Par exemple, elle peut elle aussi être carré ou polygonale. [0037] En variante, le blanc d'ceuf cuit dur 6 entoure uniquement une partie seulement de la terrine 4. Dans ce cas, le blanc d'ceuf cuit dur est uniquement en 35 contact direct avec la terrine 4 sur une portion seulement de la périphérie extérieure de cette terrine. Par exemple, d'autres légumes que ceux précédemment cités peuvent être utilisés en plus ou en remplacement de ceux-ci. Par exemple, une quantité de farine de blé inférieure, et de préférence plus de deux ou 10 trois fois inférieure, à celle de la semoule est introduite dans le liant. [0041] Le blanc d'ceuf cru peut être remplacé par du blanc d'ceuf pasteurisé. Il peut aussi s'agir de blanc d'ceuf d'une autre espèce que la poule comme du blanc d'ceuf de caille.
