L'invention a pour objet sauce de couchage comprenant, de l'eau, au moins un pigment et au moins un amidon modifié présentant : . une masse moléculaire moyenne en poids allant de 250 000 à 2 000 000 Da ; . une solubilité, mesurée selon un test A, allant de 50 à 85%. L'invention porte également sur un procédé de préparation de ladite sauce, ainsi que sur un procédé de couchage de papier à partir de cette sauce.
