Description
L'invention concerne d'un ensemble pour la cuisson d'aliments par l'intermédiaire d'un chauffage par induction. On connaît déjà de tels ensembles comprenant : - un dispositif de chauffage par induction comprenant au moins un inducteur propre à générer un champ magnétique adapté à assurer le chauffage et/ou la cuisson de l'aliment placé dans un récipient, - un plateau sur lequel peut être posé le récipient et 10 sous lequel est disposé l'inducteur. Un problème concerne la gestion de l'énergie délivrée, typiquement en relation avec les contraintes thermiques : il faut que le dispositif de chauffage chauffe de la manière la plus appropriée dans 15 - l'environnement où il se- trouve. Un but est donc ici de réaliser un chauffage performant et sûr. Pour cela, il est proposé que l'ensemble précité comprenne des moyens de régulation thermique pour assurer un chauffage asservi au matériau du plateau ou du 20 récipient posé dessus. Les foyers de cuisson ou chauffage par induction sont traditionnellement équipés d'une glace vitrocéramique. Le champ magnétique passe à travers la glace et permet ainsi l'échauffement du récipient 25 sensible au champ magnétique créé. Un autre but de l'invention est de pouvoir se dispenser d'une telle glace, en utilisant le plateau environnant précité que l'on réalisera dans un matériau autre et que dont on asservira le chauffage comme indiqué 30 ci-avant. En complément ou en remplacement, on pourra équiper le plateau d'un capteur de contrainte(s) (repère 490) permettant d'éviter d'atteindre la limite de résistance /contrainte(s) mécanique(s) admissible, que celle(s)-ci soit absolue ou relative(s). Pour la sécurité, on pourra préférer placer cette sonde ou ce capteur sous le plateau 7, de préférence à son contact. Fig.3, une-pâte 50 permet de la fixer. Pour un contrôle optimisé du plateau en lui-même, le (au moins un des) capteur(s) - figure 2-4 : la sonde de température 49 - est située à distance du récipient 9 posé sur le plateau. (voir pour partie ci-après) qui permettent d'assurer un chauffage asservi au matériau du plateau ou du récipient 9 posé dessus. On conseille que ces moyens soient commandés par des consignes prioritaires par rapport à celles que l'utilisateur lui transmet à partir de moyens (boutons, clavier...) de commande 21a qui lui sont accessibles (voir fig.1). Figure 1, on voit que la commande de l'appareil 1 par l'opérateur s'effectue par l'intermédiaire d'un bloc de commande 52, via ses touches 21a qui peuvent être associées à des voyants de contrôle du fonctionnement. Le bloc 52 est monté à travers le plan 7, dans une ouverture de ce dernier, traversante ou non. Il pourrait être distant et être utilisé comme une télécommande avec ou sans fil (liaison infrarouge par exemple). Ce bloc communique avec la carte de puissance 51 et sa commande pour le contrôle de l'énergie délivrée par l'inducteur. Concernant les moyens de régulation thermique en eux-mêmes, on conseille qu'ils comprennent, liés fonctionnellement entre eux (voir fig.4): - une unité mémoire 80 contenant des données de référence liées à la résistance à la chaleur du plateau 7 ou du récipient 9, - au moins un capteur de caractéristique(s) physique(s) du plateau ou du récipient et/ou de leur environnement immédiat, tel(s) le(s) capteur(s) précité(s) 49 et/ou 56,490, - et des moyens 500 d'asservissement de l'énergie ou de la puissance électrique délivrée en fonction de données 5 issues du capteur et de l'unité mémoire 80. Pour assurer l'asservissement recherché, on conseille que l'unité mémoire 80 contienne des données limite de résistance absolue à la chaleur et/ou de gradient de contraintes mécaniques ou de températures, 10 considérées comme acceptables par le matériau du plateau retenu, tel le plan 7. La limite de résistance à considérer pour le plateau et/ou le récipient sera ainsi une limite de contrainte(s) mécanique(s) et/ou de température(s) admissible, absolue 15 ou relatives. Une comparaison entre les relevés du/des capteur(s) et les données limite de l'unité mémoire 80, ou encore de la (des) cartographie(s) pré-enregistrée(s) sera de préférence réalisée.. 20 Deux capteurs de caractéristique(s) physique(s), tels les deux capteurs de température, 49 et 491 figs.2 et 3, reliés aux moyens d'asservissement pourront être prévus pour . - prendre en compte un gradient de contraintes ou de 25 températures supportées par le plateau entre : * une première zone de ce dernier subissant de façon importante le chauffage généré par l'induction, * et une deuxième zone éloignée subissant notablement moins ce chauffage, 30 - et limiter ainsi le chauffage si ce gradient approche d'une limite prédéterminée de gradient de contraintes ou de températures considérée comme acceptable par le plateau 7. Les zones en questior.. pourront coïncider avec les parties précitées 7b,7a. On pourra en alternative subdiviser la partie mineure 7b en deux zones, respectivement plus et moins chaudes, la première étant plus près du/d'un inducteur que la seconde. En pratique on conseille, pour la zone chaude, de placer le ou un au moins des capteurs précités, à l'intérieur des limites d'un cylindre vertical centré sur l'inducteur associé, ici 5, et de diamètre égal : - soit à 30cm, pour un inducteur de diamètre proche, - soit à 36cm, pour un inducteur de diamètre proche. Pour le(s) capteur(s) de la zone (plus) froide, on conseille de le placer hors de la limite en diamètre (projetée sur le plateau 7) de l'inducteur le plus proche, mais dans la limite d'un diamètre de 36cm centré sur cet inducteur, évitant ainsi d'occuper trop d'espace. Dans une solution qui pourra être à deux capteurs chauds , mais qui pourrait s'adapter à des capteurs respectivement chaud et froid , on pourra en particulier prévoir: - que le premier capteur, tel 49, soit placé dans ladite limite de 30cm du centre de l'inducteur, - que le second, tel 491, soit placé dans ladite limite de 36cm de ce centre, et - que les moyens d'asservissement 500 adaptent le chauffage généré par l'induction en fonction au moins : * des relevés de l'un seulement des deux capteurs, suivant le diamètre du récipient posé, * ou de la valeur la plus élevée relevée par les deux capteurs.
