Les acides gras utilisés dans ce type de réaction peuvent provenir d'huiles végétales extraites à partir de matières susceptibles d'extraction, c'est-à-dire par exemple, à partir de graines, matières cellulosiques issues de la transformation du bois, et plantes oléagineuses telles que le colza, le tournesol, le soja, la palme, la canola, les algues, le ricin, le jatropha, le thlaspi arvense, la moutarde, le lin, le chanvre, le noix de coco (copra), le maïs, l'arachide, le riz, le radis, le jojoba, le sésame, le copaïba, le coton, le pavot, ou encore le triadica sebifera. L'extraction d'huile végétale à partir de graines oléagineuses est un procédé bien connu, traditionnellement utilisé pour la production des huiles alimentaires.
