Ce module 5 comprend une broche périphérique fixe 10 dont les doigts permettent de bloquer l'artichaut dans une position prédéterminée et un élément central rotatif 11 mobile en translation verticale permettant de creuser la chair de l'artichaut au niveau de l'implantation du pédoncule fraîchement coupé. Cet élément rotatif comprend d'une part une lame 12 qui vient entailler la chair de l'artichaut et un doigt extracteur 13 qui permet d'évacuer la chair coupée. Ce doigt extracteur 13 se présente sous la forme d'une plaque coudée à angle droit vers l'axe vertical du module. Des moyens de réglage (non représentés) permettent de régler la profondeur d'attaque de l'élément rotatif 11 (et donc la position relative du couteau 12 et du doigt extracteur 13 par rapport à l'artichaut). La mise en oeuvre de ce module 5 permet d'éliminer la partie dure de la chair de l'artichaut située à proximité du fond de celui-ci correspondant à l'implantation du pédoncule. L'entaille pratiquée par ce deuxième module 5 permet de faciliter la mise en oeuvre du troisième module 6 représenté à la figure 3. La rotation du socle 21, et donc de la lame 22 permet d'éliminer les feuilles présentes à la base de l'artichaut et ainsi de faciliter le détourage ultérieur de celui-ci. Après plusieurs tours du socle 21 sur lui-même la lame 22 peut-être rétractée en déplaçant la crémaillère 24 selon la flèche C. En fonction de la morphologie de l'artichaut, on notera que l'on pourra déployer plus ou moins la lame 22 de façon à faire varier l'angle d'attaque de celle-ci.
