Abstract

Method for temporarily making food products which cake together by themselves mutually non-adhesive in order to permit their automatic packaging. It consists of the admixture and coating of the uncaked or separated products with a food-grade pulverulent agent consisting of maltodextrin. It is intended to permit automation of packaging chains by the temporary coating of the products which, after being handled, regain their size (dressing) and original character.

Description

A process which temporarily makes the self-agglutinating food products non-sticky to each other in order to allow their automatic packaging.

It is intended to allow the automation of the packaging lines by the temporary coating of products which, after handling, regain their rawness and nature.

Experience has shown that products such as candied fruit agglutinate by the very fact of their nature and even self-coagulate and make, if not impossible, but very difficult, their packaging using automatic chains, their presentation close of the customers had to keep their primitive aspect with their syrupy coating which characterizes their taste and food quality and even their form of use.

The process according to the invention has the result of temporarily making the candied fruit or any separable food product that does not stick to each other but sticking together by their contact, while allowing them to restore their appearance and structure after the time of their conditioning. than their original market quality, this treatment applying more particularly to candied fruit.

It consists of the addition and coating of the disaggregated products or separated by a food pulverulent agent consisting of maltodextrin.

According to an embodiment given by way of nonlimiting example, of a mechanical means of separation and of a distributor of the pulverulent agent spilled on the self-agglutinating product after its separation.

Generally known mechanical means are used, without limitation of other devices which can be used including manual processing.

For this purpose the use of a distribution of agglutinated product and of powder is recommended so that the product is driven by endless screw or turbine causing at the same time as a translation, a separation of the agglomerate and a distribution of powder.

This compact mass is placed as it comes from manufacturing in the hopper.

The powdered maltodextrin is sprayed by simple gravity by a second hopper near the first.

The product separated and coated with the film is collected by a tank, while a sieve makes it possible to take up the pulverulent product which is not used for recycling.

The treatment must use the following quantities of products
Maltodextrin powder agent .... 15 Kilogs
Agglutinated product 1000 Kilogs
The product coated with the maltodextrin film is no longer sticky or adhesive.

I1 is then taken up by known conditioners and put both in sachets and in glass or metallic capacities.

This maltodextrin film, after a relatively short time, is absorbed by the very texture of the product, which resumes its traditional commercial appearance with a flexible, self-adhesive syrupy coating.

The main application is intended for candied fruits of all kinds, but can be extended to equivalent auto-caking products.

As a variant of application, it is possible to use powdered glucoses and more particularly powdered starch if it is desired to obtain a final film removing the self-adhering covering, in this case 15 to 20 kg of powder are used for 1000 kg of fruit.

The contribution of the pulverulent agent has the effect of temporarily reducing the equilibrium relative humidity by approximately 3%, which in addition improves the preservation of the product generally used for deferred consumption.

Antioxidants such as ascorbic acids or the like or acidulative or other flavors giving an accentuated flavor to the product, such as glutamates, can be added to the powder in proportions in accordance with the regulations.

Finally it is possible to use a coloring agent embellishing the presentation.

This is why the treatment methods for separation and coating may vary and the secondary agents also within the limits of the equivalents without changing for this, the general conception of the invention which has just been described.
