Dans les procédés connus pour l'obtention des jus de fruits, tels les jus de raisins, jus de pommes et autres, on procédait à une série de traitements chimiques et mécaniques, à des filtrages ou opérations qui déstabilisaient le produit naturel et lui enlevaient ses principes actifs.
