Abstract

The juice is degassed by being agitated at increased temp. under vacuum pressure. Pref. the harvested fruit, e.g. grapes or apples is first washed very thoroughly to remove all traces of natural or chemical contaminants. The pips are sepd. from pulp and juice which are mixed together, heated to about 50-60 deg. C and then pressed for maximum juice extn. The juice is degassed for 20 minutes, by agitation in a stainless steel vacuum pan maintained at 50 to 55 deg.C a second degassing takes place as the juice is passed through a pasteuriser where it is held at vacuum pressure and a temp. of 72 deg.C for 15 seconds, the pressuriser feeds juice directly to a filling machine which hermetically seals containers filled under vacuum. The fruit juice contains no chemical additive but remains stable over a long shelf-life. Natural flavours and nutritional value are retained in a non-alcoholic drink which can utilise fruit from surplus grape harvests to avoid over-prodn. of wine. The drink can provide "Grape-cores" throughout the whole year.
