Abstract

Food compsn. consists of a food (I), and 0.01-25% of a non-protein colloidal ppt. of whey (II) (as modifier), and H2O. (II) is prepd. by adjusting whey to pH is not 5.8 and/or heating whey to is not 80 degrees; is a complex ppts. which has average particle size 10 mu in aq. suspension; is white in colour, has no disagreeable taste in aq. suspension up to ca. 30%; can be freeze-dried to a free-flowing powder; is capable of gelling H2O and petroleum ether; and has been deproteinated so that 5 wt.% CCl3CO2H gives is not >5 wt.% ppte. protein. Inexpensive (II) is non-toxic, has a bland taste, and is effective in modifying the physical props. of a variety of vegetable, animal, and diary foodstuffs over a very wide pH range. Thus (II) may be added to synthetic orange juice as a clouding agent, to cereals as a stabiliser, as a thickening agent for cheese, and as an emulsifier.
