Abstract
L'invention concerne la préparation de produits alimentaires semblables en texture et en goût aux produits alimentaires frits. On prépare des substituts à des produits frits en bain de graisse profond en enrobant le produit alimentaire avec un mélange émulsionné constitué par de la levure inactive séchée, une huile végétale et de l'eau, et l'on cuit au four les produits alimentaires enrobés. Application à la préparation de substituts de pommes de terre frites dites à la francaise.
