Abstract

A process for preserving food products, perishable foods and all products of biological origin comprises keeping the products in a hemetically sealed enclosure, forming a vacuum corresp. to x millibams pressure, then progressively replacing a fraction of the volume evacuated to reduce the vacuum to y millibams, by passing in purified moist air. The vacuum is then restored to x millibams, then moist air is slowly admittedly until the vacuum is y. The operation cycle is repeated during the preservation period at a temp of -5 degrees C to +16 degrees C. The process is carried out in an appts. with moist air inlet and evacuating outlet and means for automatically opening and closing the inlet and outlet openings according to the pressure. Examples of applications are to fruit, vegetables, dried flours and human blood, and organs which may be preserved for months. The process inhibits growth of aerobic and anaerobic microoganious. Also in the case of fruit and flowers, ethylene formed is removed which, if left, enhances ripening and deterioration.
