L'invention concerne la synthèse de N-acyl-L-thréonine. Le procédé selon l'invention pour l'obtention de N-acyl-L-thréonine optiquement pure consiste 1 à soumettre un ester de N-acyl-D,L-thréonine à l'action d'une enzyme protéolytique et 2 à séparer la N-acyl-L-thréonine résultante. Le groupe N-acyle peut être éliminé par voie chimique en donnant de la L-thréonine. Application : N-acyl-L-thréonine optiquement pure convenant comme supplément diététique.The invention relates to the synthesis of N-acyl-L-threonine.
