Abstract
Dispositif permettant de traiter les champignons de Paris par le vide dans le but de diminuer les pertes d'arôme, de volume, de poids, pendant le blanchiment avant mise en boîte et la stérilisation. Installation caractérisée par le fait qu'elle comporte une enceinte métallique en forme de tonneau, pouvant tourner sur elle-même, dans laquelle les champignons sont traités. Cette enceinte comporte trois compartiments séparés par des parois étanches et comportant chacun une ouverture circulaire qui, par tiers de tours successifs, se présentera devant une trémie de remplissage, devant un dispositif de mise sous vide du compartiment et au-dessus d'un tapis d'évacuation des champignons. L'invention peut être utilisée pour faire pénétrer un liquide contenant une substance coagulant à chaud dans des légumes, des viandes, des poissons, pour éviter les pertes de substance pendant le blanchiment ou la cuisson.
