Abstract

In the prepn. of anthocyanin pigments as the red-coloured, oxonium salt acid form by extraction from vegetable matter with a mineral acid, the mineral acid ions are removed without destroying the oxonium salt form by contacting the soln. with an ion-exchange resin or by adding an agent to displace the mineral anion. The mineral acid is e.g. HCl H2SO4, SO2 etc. The pigments are used in foodstuffs, pharmaceuticals, cosmetics etc. The mineral anions are replaced by ascorbate, citrate, tartrate ions etc. which maintain the oxonium salt form (red) whilst being more acceptable organoleptically or therapeutically.
