Abstract

Volatiles are recovered from CO2, produced by fermentation of must in open topped vats; pref. by passing gas through a vertical calendar tube-in-shell condenser, cooled e.g. by circulation at refrigerated brine on shell side; the temperature being held above that of co-condensation. The CO2 passes up a central duct, and is deflected by a domed top, down through the tubes, to escape via a side outlet. Condensed volatiles are collected by a sloping tray below tubes, and returned to vat. Flavour of wine is improved, because volatiles are not lost to atmos.
