Abstract

Preservation of a cheese portion after cutting it to size; any cut, uncrusted surface is heated to give it an asepticised outer layer and the whole portion is wrapped in a permeable material, e.g., perforated paper, which does not inhibit mould-growth on the remaining crusted surface(s) of the portion.
