Abstract

Reconstituted milk type product contains (a) 20-30% animal or vegetablefats, rendered emulsifiable by a mixture of sucroglycerides and lecithins, (b) 15-25% proteins, as solid or soln., and being chemically or biologically degraded products e.g. treated autolysates, casein or proteins from oil press cakes, (c) 50-55% sugars (opt. omitted for diabetics), and (d) additives e.g. vitamins, minerals, flavourings etc. The product may replace milk, in over-populated areas or is used for special diets. It is easily digested.
