Abstract

Complexes are made from flavanol monomers and polyacids chosen from organic polyacid-alcohols, phosphoric acid, and boric acid. These complexes arer stable and thus useful in preserving the flavanol monomers for antiscorbutic use. If the complexes are made from several flavanol monomers and polymers in a mixture, the complexes can be selectively dissolved in different solvents, and this is a useful method for purifying flavanols. The preferred polyacids are citric and tartaric acids, and the prefd. flavanols are (-)epicatechin and leucoanthocyanidol.
