Abstract
Mixtures of polyols practically free of sorbite, exhibiting little hygroscopy, not causing caries and usable in confectionery are obtained from starch hydrolysates by submitting them to bacterial or enzymatic oxidation, which converts dextrose to gluconic acid or alkali gluconates, which are removed by means of ion exchange resin before the reduction of hydrolysate by hydrogen. Oxidation may be carried out with acetobacter suboxidans.
